You Win Some, You Lose Some

I’m usually a pretty decent cook. I’m not great at making up my own recipes, but I can follow a written recipe like nobody’s business and I’m usually pretty good at customizing a recipe to fit my taste. But tonight I created a disaster!

Just lay your eyes on this mess …

It was suppose to be a lower calorie version of a Turkey Pot Pie using Reduced Fat Ritz Crackers for the crust instead of a pie crust. It included: 1 cup of diced turkey (leftover from Thanksgiving of course), a can of mixed vegetables, and a can of Cream of Mushroom soup, then I topped it with crumbled Ritz. I obviously burnt the shit out of it!

I scraped off the burnt Ritz to try to salvage the meal and paired it with a nice salad …

Still disgusting. It was virtually tasteless. So lesson learned, no more cheap imitations of pot pie. I had to have a spoonful of peanut butter straight out of the jar after dinner to make up for my disaster of a meal. 🙂

Madame Mandy’s Ass Smackin’ Pancakes

Good morning! For the past several weeks I’ve been struggling with getting my son to eat healthy. He is almost 20 months old and pretty much won’t eat anything other than poptarts, peanut butter crackers, and the occasional banana. I’ve tried every tactic I can think of and nothing has worked. He tends to eat really well in the mornings and little to nothing the rest of the day. Tim and I talked and decided that we should try to get the bulk of his nutrition in in the mornings since that is the time of day he tends to eat the most.

This morning I was trying to create something semi-healthy that he would actually eat and so I invented the Madame Mandy’s Ass Smackin’ Pancakes. Tim and I were joking that the pancakes were so good I should submit the recipe to my favorite recipe site AllRecipes.com, but they never published the last recipe I sent them. I was telling him how they say because of the large volume of recipes they receive they review them in order of uniqueness. So he said I should call them Madame Mandy’s Ass Smackin’ Pancakes and then they might get some attention.

So for breakfast I had one Ass Smackin’ pancake and a grapefruit.

The pancakes include:

2 cups Bisquick Heart Smart
1 1/4 cups Skim Milk
1 Banana (mashed)
4 cups Spinach (wilted and chopped)
1/4 Pumpkin Butter
1 egg
1/4 cup milled Flax Seed

Mix all ingredients and cook on a griddle or pan. Makes 8 huge pancakes or 12 smaller ones.

They turned out really good and Lincoln om nomed his. 🙂

Goals for December

After my long run this afternoon I relaxed on the couch and watched Intervention while Tim and Lincoln napped. It was such a peaceful time. I don’t think I do enough sitting around these days. It seems like these days if I’m not out running or cooking then I’m cleaning or blogging. It felt so relaxing to just sit and do nothing else for a while, I even dozed off for a bit.

This afternoon I put some serious thought into what goals I want to strive for in the upcoming month. I don’t want to be too strict on myself and set goals that are unattainable or that I can’t stick to long term. The things I have chosen are things that I would like to make a habit of. Some of these things I struggle with in my daily life and some are things that were once habits and for one reason or another I’ve gotten away from.

  • Take Vitamins Daily – I was doing really good at this for a while, and I got out of the habit. I find that I did the best remembering to take them when I would leave them out on the kitchen counter instead of in the medicine cabinet.
  • No Snacking At Work on Other People’s Food – This is one of my major weak points. We always have candy, snacks and various junk food around at work and I used to have the willpower to say no, but lately I have really been struggling. I want to find the willpower again that I once had in this area.
  • Stay Within Points for Day/Week/Activity – Lately it seems like my body has needed more fuel than usual. While this is fine in itself, I still have a few pounds I need to lose and I want to keep myself atleast within the alloted points I have for the day, week and accrued activity.
  • Track Points Everyday – This will help me be accountable for what I eat and will also help with the urge to snack at work.
  • Weigh & Measure All Food – Again this goes along with the previous points, its all about accountability.
  • Minimize Sweets – I’ve never been a big dessert eater, but for some reason lately I have really increased my sweet intake. A little every now and then is perfectly acceptable but I don’t need desserts everyday.
  • Concentrate on Nutrition and not just Points – I’m already pretty good at this, but there is always room for improvement. I want to make sure to concentrate on the nutrional value of my food and not just the calorie/fat content.
  • No Binges! – Occasionally (every couple weeks or so) I just absolutely binge eat, and that is unacceptable. It usually starts with a snack and when the urge to eat is not satisfied I continue to stuff my face until the urge has passed or I’m sickly full. I want to concentrate on noticing when a binge is beginning and stop it in its tracks.
  • Stop Eating When Satisfied – This goes along with no binge eating. I need to assess my hunger levels and fullness levels and stop eating when my body has had enough regardless of how much food remains on my plate.

Some of these goals will be easy and some of them will be struggles, but I’m commited to making these points a habit in my life. You’ll notice I didn’t include any goals about physical activity, I feel that at this time I am where I need to be in regard to exercise. I plan on continuing my Half Marathon training as schedule and don’t feel like at this time I need improvement in these areas. Eating is where the troubles at!

Speaking of eating … Tonight for dinner I made BBQ chicken in the crockpot. This is one of my new favorite crockpot recipes since I discovered it a couple of weeks ago. Its so incredibly easy that its almost ridiculous! I served the BBQ chicken over mashed potatoes with a side of sauteed onions and green beans. Delish!

9 Down!

I forgot to mention yesterday that I signed up for the 12K’s of Christmas run on December 12th. I’m very excited and nervous. Tim will be out of town that weekend and won’t be able to go run with me, also it will be the longest distance that I have raced to date. I’ve been putting off signing up to make sure I was physically going to be able to do it, but I finally bit the bullet. I know I’m ready! My mind just tries to play tricks on me.

This morning I got up and ate a piece of whole wheat toast with grape jelly before my run.

I got dressed, gathered my gear and my water and headed out to Fort Toulouse park for my 9 mile run. The first 5 miles were a breeze! Miles 5-7 weren’t bad, but I could tell my body was starting to get a little tired. My neck and shoulders started cramping up for some reason, but I shook it off and continued on. By the time I hit mile 7.5 I was seriously ready to be done! But I knew I still had enough in me to finish it out.

All in all, I did 9 miles in 1 hour 19 minutes! A new personal distance record for me. 🙂

I listened to an audibook called What I Talk About When I Talk About Running by Murakami Haruki while I ran. Some parts of the book are very interesting, but I found my mind wandering quite a bit. Either way, it was a good way to pass the time.

Now I’m off to shower and eat some more Tex-Mex Turkey Soup … I’m STARVING!

Christmas Tree, Good Eats and Yummy Treats

I’ve had some veggies in the fridge for a while that I needed to use up so I decided to make Zucchini Herb Casserole and corn on the cob to go with our BBQ Pork Tenderloin for dinner tonight. I altered the recipe to make it more figure friendly than the original. I used Long Grain Wild Rice instead of white rice, less olive oil, and I used fat free shredded cheese and less than half the cheese that the recipe called for.

All together …

For some reason the picture makes the pats of butter on my corn on the cob look enormous! It really wasn’t that much, I swear!

When I was cooking dinner with all my fresh produce, I got to thinking how I wish I had a place that I could grow my own veggies. It would be so nice to be able to go out in my garden and pick corn, cabbage, tomatoes, peppers, etc for dinner. Maybe some day. But for now I have Aerogarden …

I bought the Aerogarden for Tim last Christmas, and it has sat in the box in our garage ever since. I talked Tim into bringing it in today and helping me set it up so that we can grow our own herbs. I have always had a black thumb, I mean I can literally kill any living plant, so I really hope that I can manage to not screw this up. If it works out we will have fresh: dill, italian basil, purple basil, mint, chives, parsley and thyme. Yay! I need to find out if there are other herbs available. I use parsley and thyme alot, and I could use chives .. but I wouldn’t use mint, dill or basil very often I don’t think.

After dinner we were going to decorate our Christmas tree as a family, but Lincoln was being a pill and fell asleep much earlier than usual. So Tim and I decorated it alone. We made Hot Chocolate with Rum, turned on the Christmas music and had a good time decorating our tree.

Hot chocolate with rum rocks! We had a hard time finding enough ornaments for our new 9 foot Christmas tree, and we also had a hard time decorating the top of the tree. I still need to find a topper, the tree isn’t strong enough to hold the star that we normally top our trees with.

I couldn’t resist finishing off the rest of the Pumpkin Dump Cake. That stuff is the DEBIL!

No whipped cream tonight. I couldn’t bring myself to pay $1.00 for Cool Whip when I got it for $.20 last week. I’m a freak, I know. I hope everyone has a great night! I’m going to try to hit the hay early tonight, I have a 9 miler tomorrow. It will be a personal distance record for me, so wish me luck!

Busy Saturday

My sweet hubby let me sleep in til almost 9:00 this morning. Trust me thats late when you have a toddler running around. I got up and made a Green Monster for breakfast and wrote my To-Do list for the day.

  1. Take chairs and dishes back to MIL.
  2. Laundry
  3. Dishes
  4. 1 hour Elliptical
  5. Decorate Tree
  6. Sweep and Mop floors
  7. Separate chicken and freeze (I bought 7 packages of chicken breasts on sale yesterday for $1.79/pound)
  8. Clean bedroom

I never actually complete my entire To- Do list, or I should say I very rarely do. But it gives me something to strive towards. I usually end up triaging my to-do list based on what is most important, or sometimes I go with what is easiest and knock those out first.

I will decorate the tree after dinner tonight and might spend a few minutes cleaning the bedroom before bed later, but I’ll probably save the sweeping and mopping for tomorrow. I’ve already got a mental list going for the things I want to accomplish tomorrow.

I had a great workout today on the elliptical. I used to do the elliptical quite a bit, but ever since I’ve fallen in love with running the elliptical has been put on the back burner. I ran 5 miles yesterday, and I’m scheduled to run 9 miles tomorrow so I decided I would trade today’s scheduled 4 mile run for 1 hour on the elliptical to give my body a little break. I really enjoyed it. I read my book Stolen Innocence for the full hour I was on the machine and it was really nice. I rarely find time to read anymore except for a few minutes before I go to bed at night, and I usually end up falling asleep in my book and having to re-read some things. So it was really nice to just have 1 hour to myself to read and burn some calories.

Today’s eats so far have included: a Green Monster, Tex-Mex Turkey Soup, an apple, a soft pretzel and a few chunks of cheddar cheese. I’m planning on making Pork Tenderloin and some yummy veggies for dinner tonight. I’ll be back later with recipes and pictures and we still have to talk about the goals I’m setting for myself, but I might save that for tomorrow.

The Spread

Thanksgiving is over, but I’m having a hard time getting back on track with the healthy eating. Perhaps its time to set some goals for myself. But before we do that, this was our holiday spread …

Antipasto, ham, turkey, gravy, dressing, green bean casserole, mac & cheese, sweet potato casserole and pumpkin dump cake (not pictured). Everything was sooo delicious! I think my personal favorites were the green bean casserole and the pumpkin dump cake. I didn’t get any pictures of my family because we were too busy om noming the food to stop for photo ops, but we had 10 people over: myself, Tim, Tim’s mom, Lincoln, my mom and dad, my 2 sisters and my neice and nephew. It was very nice to get to see my family. We are all spread out across the state and don’t all get to be together very often.

This morning I got up and made homemade waffles and scrambled cheese and chive Eggbeaters for breakfast before we went out shopping for the day. I decided this year that we should buy a artificial Christmas tree. I’ve never had a fake tree before, but I’m tired of all the hassle of real trees. I found a great deal on a 9 foot tree at Sears, it was originally $400 but was on sale for $267. It should pay for itself in about 4 years.

For lunch Tim and I went to Jason’s Deli. I ordered half of a Medditeranean Wrap and a side salad. It was the perfect amount. Normally I would pile my salads full of cheese, bacon, croutons, sunflower seeds, ham, and drown it in Ranch dressing. But today I had: lettuce, sprouts, olives, tomatoes, mushrooms and artichokes. I had my dressing on the side and used less than half of it. Yay! Apparently I wasn’t on the ball with the picture taking today because I didn’t get my breakfast or my lunch. Forgive me.

After more shopping Tim and I stopped by my grandparent’s house. They watched Lincoln while we went for a run in their neighborhood. We had a 5 mile run on the schedule for today. We drove the route before we went out because last time we ran there I got majorly lost. I hate to say it but I got lost again! I somehow made a 2.5 mile loop into a 4 mile loop. Oh well, atleast I didn’t have to do the whole thing twice to get my miles in.

This is a very comfortable pace for me. Its actually uncomfortable for me to run much slower than this, and anything much faster is a push. I forgot my knee brace today, so I ran without it. I actually didn’t have any trouble, but I’m not sure I want to start running without it on a regular basis yet. Maybe for some shorter runs, but definitely not my Sunday long runs. I’m scared to death of hurting my knees and not being able to run.

Tonight for dinner I wanted to use up some of the leftover turkey from Thanksgiving, so I went searching for recipes. I came across this Tex Mex Turkey Soup. I’ve never really been a fan of taco soup, so I wasn’t sure if I would like it or not. I’m more of a chili girl than a soup girl, but it had such good ratings that I thought it was worth a shot.

It was delicious! I’m definitely going to make this every year after Thanksgiving, it was an excellent way to get rid of some leftover turkey without living on turkey sandwhiches for a week. Even after all of that I couldn’t resist dessert. I had a small piece of Pumpkin Dump Cake and a small piece of Pumpkin Caramel pie. Can you tell I like whipped cream?

I intended to decorate our new tree tonight, but I’m absolutely exhausted. I guess I’ll have to save it for tomorrow. Tomorrow I’ll also discuss some goals I want to set for myself to get back on track after Thanksgiving.
