Burgers and Fries

Tonight I was craving a burger and fries. Don’t worry though, I traded in the hamburger for a delicous Homemade Black Bean Burger and the traditional french fries for Sweet Potato Fries. It was yummy!

I feel a little bit guilty because I just now realized the Pledge to Be Veg that I signed was to be vegan for 30 days! I must have completely mis-read that. I am in no way prepared to be Vegan, nor do I want to be at this point. I will continue my version of the pledge with no meat or meat products, but I will continue to eat eggs, cheese and milk.  Oops 😦

Today was a rest day. It felt good not to have to worry about when I was going to fit in a run, but on the other hand my day didn’t feel quite complete without exercise.

I started the day with oatmeal.

My oatmeal contained:

  • oats
  • banana
  • flax seed
  • almond butter
  • agave nectar

I was really looking forward to some rockin’ oatmeal this morning, but honestly it wasn’t as good as I expected it to be. My banana wasn’t quite as ripe as I’d like it and I’ve discovered I’m not a big fan of Almond Butter. I’ve tried it twice now and it just doesn’t do anything for me. Maybe I’m eating the wrong kind .. who knows.

Lunch was leftover pizza and a small serving of leftover Mexican Minestrone.

I took this rest day as an opportunity to spend some extra quality time with my son. After lunch we went to the playground.

We played hard for about an hour and then headed back home to make Green Monsters.

Mine included:

  • frozen peaches, grapes and strawberries
  • Skim milk
  • Plain Greek Yogurt
  • spinach
  • flaxseed

Unfortunately for some reason whenever I drink a smoothie it makes me more hungry! The Green Monster sparked a mini binge and I ate: a granola bar, 2 tablespoons of Dark Chocolate Peanut Butter straight from the jar, and saltines with Strawberry Rhubarb preserves. I hate it when I do that 😦

    I like almond butter on waffles with warm blueberries. Also try adding some whey protein to the smoothie to help with the hunger. I add the whey protein to my oatmeal too sometimes.

  2. Stuffed Peppers and Cabbage

    Ingredients:
    EVOO, oregano (OR Italian seasoning from Pampered Chef), 1 – 10 ounce pkg frozen chopped spinach, 8 oz. pkg cream cheese (I use light), 2-3 eggs, 3 cups bread crumbs (fresh-diced), 1 large onion (chopped), 3 green peppers, 1 medium head cabbage, Italian flavored bread crumbs (Progresso), Parmesan OR Roman cheese (grated).

    Clean and half peppers; wash and separate leaves of cabbage. Cook peppers in 1 inch of water (or in a steamer basket) for about 8 minutes; cabbage for about 5 minutes; drain. Dice fresh bread. Saute onion in about 2 Tbsp EVOO. Cook spinach, partially drain. Add onion and spinach to diced bread crumbs. Add cream cheese, 3 Tbsp parmesan cheese and eggs. Mix well. Season to taste. Add Italian bread crumbs. Fill peppers and cabbage leaves. Place in baking dish (glass 9×13), sprinkle with oregano (or the PC Italian season). Add 1/2 inch of water (hot) to pan. Bake at 350 for 50-60 minutes.
