Now thanks to Caitlin, I have also mastered the Sweet Potato. But first … ever wondered what happens when you forget you were in the middle of making a grilled cheese sandwich and you sit down and start catching up on your blog reading?
Well the first thing that happens is your smoke alarm goes off. Then you end up with this:

Caitlin at Healthy Tipping Point informed me via Twitter yesterday that “If you have not tried the baked bean and sweet potato combo, you are not living.” So I decided to give it a try for lunch today.
Honestly I’m not a big sweet potato fan, sure I like it covered in brown sugar with lots and lots of butter, but other than that .. not so much.
I baked my Sweet Potatoes in the oven at 400 degrees for an hour. (I’m not a fan of microwaving, but you could take that route). Then I topped them with Bush’s Vegetarian Baked Beans and served it with a side of roasted brussel sprouts.
I literally can’t believe how well this combination of flavors works! So delicious! I’m sold.
