Granted I claim this every morning just about, but I really mean it this time. ON IT!
I spent some time this afternoon searching the interwebs for healthy, interesting recipes that looked healthy, tasty and blogworthy.
I present to you, Palak Paneer. I’ve had this recipe in my Pinterest board for several months, but just got around to making it tonight.
Firm tofu, onion, plain Greek yogurt, mustard seeds, ginger root, spinach, cumin, curry powder.
1. Brown tofu in oil approximately 6-8 minutes and remove to plate.
2. Saute sliced onion, grated ginger, minced garlic and 1 tbs mustard seeds in oil until onion is translucent.
3. Add spinach to onions and allow to wilt.
4. Combine 1 cup yogurt, cumin and curry powder in a small bowl. Add yogurt mixture and cooked tofu back to pan and combine. Serve with brown rice.
Traditional Palak Paneer consists of spinach and cheese, by replacing the cheese with tofu this makes for a healthier version lower in fat. Freaking .. ON IT.
Oh, and it was good too.
