Carpe Diem

I’m still riding the Fall high that I started on yesterday. Started the day off with a lovely breakfast at Starbucks outside while I read my newest issue of Vegetarian Times Magazine.

I picked out this yummy looking jambalaya to make for dinner tonight.

Parsnips, Carrots, Sweet Potatoes … oh my.

After breakfast I headed over to Earth Fare, only my most favorite place on earth, to get the ingredients for dinner. And I happened upon this little gem …

PB2, Peanut and Chocolate powder … mix 2 tablespoons powder with 1 tablespoon water until smooth. 45 calories.

Shut your mouth.

I knew this moment had the potential to be life changing.

Tonight at 5:00 officially (according to me) is the start of the weekend, so I headed over to restock my Chocolate Shop supply and picked up a really cute lunch bag that I couldn’t resist.

I have a little bit of a problem when it comes to lunch bags. I don’t really know what the deal is … but this is my collection…

Anyway ….

After shopping I had the pleasure of meeting my honey for lunch before the packet pick-up for tomorrow’s Montgomery Half Marathon.

Thai Basil Rolls and Mixed Vegetables.

We walked about a half a mile along the race course over to the packet pick-up and go our swag.

I’m planning on spending the evening loving on my men, cooking some yummy jambalaya and nom-ing on this Pumpkin Pie Froyo that I just made.

I have literally owned this Ice Cream Maker for 10 years, maybe more and I have never once used it. I found it in the garage a few weeks ago and decided it was time to put it to use.

1 cup Greek Yogurt, 1 cup Pumpkin Puree, 1/4 cup Agave Nectar and about 2 teaspoons Pumpkin Pie Spice.

I ended up throwing in a tablespoon of brown sugar at the last minute, to give it more of a Pumpkin Pie flavor.

What the heck was I waiting on all those years?! Now … that … is life changing.

I’m already thinking up all kinds of new combos, maybe even using my new PB2. Hmmm.
